Ingredients:
1 eachPIE PASTERY
36 eachRITZ CRACKERS
2 cupWATER
1 cupSUGAR
1 cupBROWN SUGAR
2 tspCREAM OF TARTAT
2 tbspLEMON JUICE
1 eachLEMON RIND, GRATED
2 tbspBUTTER OR MARGARINE
1 dashCINNAMON TO TASTE
Procedures:
1Note: perhaps the most famous fake, this apple pie contains no apples.
2Made famous by the ritz cracker manufacturer during world war ii when apples were hard to find, this pie uses candied cracker crumbs and lemon juice and cinnamon to fake the taste of mom"s real thing.
3Preheat oven to 425 deg f.
4Roll out pastry and fit to pan.
5Break crackers coarsely into the pastry lined pan.
6Combine water, sugars and cream of tartar in a saucepan.
7Boil gently for fifteen minutes.
8Add lemon juice and rind and let cool.
9Pour mixture over the cracker crumbs.
10Dot with butter and srinkle with cinnamon.
11Roll out the remaining pastry.
12Cover the crackers.
13Trim and flute the pastry edges.
14Cut slits in the top crust to let steam escape.
15Place in oven and bake for 30 to 35 minutes or until crisp and golden.
16Serve warm or at room temperature
