Mom's southern pecan pie

Ingredients:
1 Unbaked pie shell
1 cupFruit sweetener
1 tbspCornmeal
1/3 cupUnsweetened applesauce or
--applebutter
3 tbspWater
2 tbspCornstarch
3 Eggs
2 tspVanilla extract
2 tbspVery strong coffee or
-espresso (prepared - not
-grounds)
24 Pecan halves
Procedures:
1Prepare pastry and place in 9" pie pan.
2In large bowl, combine fruit sweetener, cornmeal and applesauce/butter.
3Beat with electric mixer.
4In small bowl, blend water and cornstarch until smooth.
5Add to fruit sweetner nixture and blend.
6Beat in eggs one at a time.
7Stir in vanilla and coffee.
8Pour mixture into pie shell.
9Decorate top with pecan halves.
10Bake 30 to 40 minutes - or until custard is set - at 375 degrees.
11Cool slightly before cutting.
