Ingredients:

| cup | Maple Syrup ( N.H. prefered) | | 1
| tbsp | Butter | | 2
| each | Egg whites | | 1
| x | Pinch salt | | 1
| x | Chopped Nuts | | 1
| cup | Hot water | | 3
| tbsp | Cornstarch | | 2
| each | Egg yolks | | 1
| tbsp | Maple syrup |

Procedures:
| 1 | Combine syrup, hot water and butter and bring to a boil. | | 2 | Mix cornstarch, salt and enough cold water to make a thin paste, add egg yolks and beat well. | | 3 | Add hot syrup mixture gradually, return to heat and cook untill thickened, stirring constantly. | | 4 | Cool slightly. | | 5 | Pour into cooked pie shell. | | 6 | Beat egg whites stiff, adding slowly the tablespoon of syrup. | | 7 | Pile on pie and brown in hot oven. | | 8 | Add chopped nut meats if desired to top |
