New orleans pecan pie

Ingredients:
3 Egg yolks
1 cupSour cream
1 cupSugar
4 tbspCornstarch
1/4 tspLemon rind, grated or
Lemon extract
Pn Salt
1 Pie shell (9" baked, cooled)
2 Egg whites
1 cupBrown sugar
1 cupPecans (chopped)
Procedures:
1Mix egg yolks, sour cream, sugar, cornstarch, lemon rind, and salt.
2Cook in top of double boiler until thick.
3Pour into pie shell.
4Beat egg whites.
5Add brown sugar, slowly, stir in pecans.
6Spread over filling.
7Bake until lightly browned.
8Cool; refrigerate for several hours.
