Old fashioned mince pie

Ingredients:
PLACE IN LARGE KETTLE
1 cupTVP granules
1 cupHot water
4 cupTart apples, peeled & diced
1 cupRaisins *>OR<* currants
1/2 cupApple cider
1/2 cupBrown sugar (reduce if need)
1 Orange, grated rind & juice
1 Lemon, grated rind and juice
STIR IN
1 tspCinnamon
1 tspNutmeg
1 tspMace
1/2 tspAllspice
1/2 cupChopped walnuts (optional)
HAVE READY
1 Double crust for 9" pie
Procedures:
1Bring first group of ingredients in kettle to a boil, reduce heat and simmer gently until apples are soft, about 20 minutes.
2Stir in spices and nuts and cook 5 minutes more.
3Keep in a covered jar in refrigerator until ready to use.
4Makes 1 quart.
5To make pie: line a 9" pie plate with the bottom crust, fill with mince mixture, top with crust, seal edges by crimping together, slash top in 6 places.
6Brush a little soy milk onto the crust.
7Bake at 375f about 1 hour until nicely browned.
8If pie begins to brown too soon, lay a piece of foil lightly over the top.
9"my grandmother was famous for her mincemeat pies, which she made for the winter holidays using minced boiled beef.
10This pie is thick and rich in flavor, reminiscent of my grandmother"s pies, but in a much healthier recipe.
