Ingredients:
8 ozCream Cheese, Softened, 1 Pk
2 Eggs, Lg
1/2 cupSugar
2 tbspMilk
1 tspVanilla
1 Unbaked 9-inch Pie Shell
29 ozPeaches, Sliced, 1 Cn
1 tbspCornstarch
1/4 cupSugar
1 tspLemon Juice
1/4 tspAlmond Extract
GARNISH
Maraschino Cherries
Procedures:
1Beat the cream cheese in a bowl, using an electric mixer set on medium speed, until smooth.
2Gradually add the eggs, ?cup of sugar, milk and vanilla, beating well after each addition.
3Pour into the unbaked pie shell.
4Bake in 375 °F.
5Oven for 30 minutes or until set.
6Cool on a wire rack.
7Drain the peaches, reserving 1 cup of the juice.
8Combine the cornstarch and ?cup sugar in a small saucepan.
9Gradually stir in the reserved peach juice, lemon juice and almond extract.
10Cook over medium heat, stirring constantly, until the mixture boils and thickens.
11Remove from the heat.
12Arrange the peaches in a circle, petal fashion, on top of the filling.
13Garnish with maraschino cherries.
14Spoon the glaze over the fruit.
15Cover and chill in the refrigerator for at least one hour or until set
