Artichoke pie

Ingredients:
5 Cloves fresh garlic
1 medOnion
2 tbspButter
3 largeEggs
1 cupWhipping cream
1/2 cupShredded Mozzarella cheese
1/4 cupGrated Parmesan cheese
Salt and pepper to taste
1 can8 ?oz. artichoke hearts
1 Unbaked 9-inch pastry shell
Procedures:
1Mince garlic and thinly slice onion.
2Saute in butter until soft and golden (do not brown).
3Beat eggs and add cream, cheeses, salt and pepper, and garlic-onion mixture.
4Drain and cut artichokes in quarters.
5Add to egg mixture and gently pour into pastry shell.
6Bake in hot oven (400 degrees) about 45 minutes until set.
7Serve warm or cold, as entree or appetizer.
8Makes 1 9-inch pie
