Cajun potato salad

Ingredients:
2 lbsSmall red potatoes
1/2 cupChopped red onions
1/2 cupSliced green onions
1/4 cupFresh parsley, minced
6 tbspCider vinegar, divided
1/2 lbsPrecooked smoked Kielbasa
-or Cajun sausage, sliced
6 tbspOlive or vegetable oil
1 tbspDijon mustard
2 Garlic cloves, minced
1/2 tspPepper
1/2 tspCayenne pepper
Procedures:
1Cook the potatoes in boiling salted water for 20-30 minutes or until tender; drain.
2Rinse with cold water; cool completely.
3Cut into ? slices; place in a large bowl.
4Add onions, parsley and 3 tbs.
5Vinegar; toss.
6In a medium skillet, cook sausage in oil for 5-10 minutes or until it begins to brown.
7Remove with slotted spoon and add to potato mixture.
8To drippings in skillet, add mustard, garlic, pepper, cayenne pepper and remaining vinegar; bring to a boil, whisking constantly.
9Pour over the salad; toss gently.
10Serve immediately
