Ingredients:
2 cupCooked chicken, chopped
1/2 cupMonterey jack cheese
-shredded
1/2 cupCheddar cheese, shredded
1 Avocado, diced
1/2 cupOlives, chopped
1 Tomatillos, chopped
1/2 tspChili powder
1/4 tspGarlic powder
1 tspOnions, chopped
Black pepper
2 tbspMayonnaise
1 tspGreen chiles, minced
2 tspSun-dried tomatoes
-oil-packed -- minced
Procedures:
1Recipe by: jo anne merrill preparation time: 1:00 * a tomatillo is also known as a mexican cherry tomato.
2** use a dash of onion juice instead of minced onions if preferred.
3Lightly mix the first 10 ingredients together.
4Moisten with mayonnaise, using more or less as desired.
5Mound in 4 decorative serving dishes, sprinkle the minced green chilies and minced sun-dried tomatoes on top.
6Chill for 1 hour.
7Serve with corn chips or crisp-fried tortillas as a light lunch
