Ingredients:
3 1/2 lbsBoneless lean beef roast
1 tspDry mustard
1/2 tspSalt
1/2 cupChopped onion
7 1/2 ozCan tomato sauce
2 tbspVinegar
1/2 tspThyme
1/4 tspFreshly ground pepper
Procedures:
1Braising in tomato sauce guarantees tender, flavorful beef.
2Trim all fat from roast.
3Rub dry mustard and salt into the surface of the meat.
4Place in a lightly greased, oven-proof dish.
5Top with onion.
6Combine tomato sauce, vinegar, thyme and pepper.
7Pour over roast and cover tightly.
8Bake at 325°F for 3 hours until meat is tender.
