Ingredients:
NORWOOD
2 tbspOIL
1 1/2 cupCELERY -- SLICED
1/2 cupONION -- CHOPPED
10 mlGARLIC
1 tbspCHILI POWDER
3/4 tspCUMIN
2 cupWATER
1/2 cupLENTILS
16 ozCAN TOMATOES IN JUICE --
CHOPPED
2 tbspTOMATO PASTE
2 tbspGREEN CHILIES -- CHOP
10 ozRED KIDNEY BEANS -- DRAINED
& PEPPER TO TASTE
Procedures:
1In large saucepan cook celery, onion and garlic still soft about 4 min. add chili powder and cumin; cook, stirring one minute.
2Add water and bring to boil.
3Add lentils reduce heat, cover and simmer 20 minutes.
4Add tomatoes and their juice, tomato paste, chopped green chilies, salt and pepper.
5Cover and cook 25 minutes.
6Add kidney beans cook and stir 5 more minutes.
7Serve over hot rice and sprinkle with cheese.
