Ingredients:
2 1/2 cupCoriander Seeds
1 cupCumin Seeds
1/4 lbsLarge Cardamoms
1/2 cupCinnamon
2/3 cupCloves
1 cupPeppercorns
1 tspGrated Nutmeg
Procedures:
1Roast the coriander and cumin seeds, separately, in a warm oven or under a low grill for about 3 to 5 minutes, shaking them round constantly if under a grill.
2This is to make them easier to grind and the seeds should not burn.
3Peel the cardamoms.
4Remove the husks and strawy bits.
5Grind all the spices in a blender or finely adjusted coffee grinder.
6Stor in an airtight container.
