Ingredients:
1 medEggplant
1 1/2 tbspVegetable oil
2 ea Red chiles, dried
1/4 tspFive-spice powder
1/4 tspTurmeric
1/2 tspSalt
2 tspRoasted red chile paste
1 tbspWater
1 cupGreen onions, chopped
Procedures:
1Smoke & roast eggplant.
2Cool, mash & set aside.
3Heat oil in a large skillet & fry red chiles until they darken: this only takes a few seconds in hot oil.
4Add five-spice powder & fry until it starts to crackle.
5Stir in the turmeric & salt, followed by the red chile paste & water.
6Mix well.
7Add the eghgplant, cover & simmer 10 to 15 minutes.
8Add green onions & simmer a further 2 minutes.
9Serve at once otherwise the green onions will lose their colour.
