Ingredients:
| 1
| med | Eggplant | | 1 1/2
| tbsp | Vegetable oil | | | 2 ea Red chiles, dried | | 1/4
| tsp | Five-spice powder | | 1/4
| tsp | Turmeric | | 1/2
| tsp | Salt | | 2
| tsp | Roasted red chile paste | | 1
| tbsp | Water | | 1
| cup | Green onions, chopped |

Procedures:
| 1 | Smoke & roast eggplant. | | 2 | Cool, mash & set aside. | | 3 | Heat oil in a large skillet & fry red chiles until they darken: this only takes a few seconds in hot oil. | | 4 | Add five-spice powder & fry until it starts to crackle. | | 5 | Stir in the turmeric & salt, followed by the red chile paste & water. | | 6 | Mix well. | | 7 | Add the eghgplant, cover & simmer 10 to 15 minutes. | | 8 | Add green onions & simmer a further 2 minutes. | | 9 | Serve at once otherwise the green onions will lose their colour. | | 10 | Bharti kirchner, "the healthy cuisine of india: recipes from the bengal region |
