Ingredients:
| 1/2
| cup | Basmati rice | | 2
| cup | Skim milk | | 1
| tsp | Vanilla | | 3
| tsp | Sugar | | 1/2
| cup | Raisins | | 1
| cup | Non dairy whipped topping | | 6
| | Sprigs mint (optional) |

Procedures:
| 1 | Soak rice in ?cup water for approximately 1 hour, then cook rice in same water until thick. | | 2 | Add skim milk. | | 3 | Cook slowly stirring occasionally until thickened, but stop cooking before all of the liquid is absorbed. | | 4 | Allow to cool, then add vanilla, sugar, and raisins. | | 5 | Fold in whipped topping. | | 6 | Spoon into 6 serving dishes. | | 7 | Garnish with sprig of mint, if desired |
