Ingredients:
1/2 cupBasmati rice
2 cupSkim milk
1 tspVanilla
3 tspSugar
1/2 cupRaisins
1 cupNon dairy whipped topping
6 Sprigs mint (optional)
Procedures:
1Soak rice in ?cup water for approximately 1 hour, then cook rice in same water until thick.
2Add skim milk.
3Cook slowly stirring occasionally until thickened, but stop cooking before all of the liquid is absorbed.
4Allow to cool, then add vanilla, sugar, and raisins.
5Fold in whipped topping.
6Spoon into 6 serving dishes.
7Garnish with sprig of mint, if desired
