Ingredients:
3 tbspGhee
1 medOnion, peeled, halved
-lengthwise, sliced
-lengthwise into paper-thin
-slivers
1 tspSalt
1 lbsOkra
1 tbspCumin, ground
1/4 tspPepper, black
Procedures:
1Wash okra, scrape skin lightly to remove any surface fuzz.
2Pat dry with paper towels.
3In skillet, heat ghee over moderate heat.
4Add onion and salt, stir 7-8 minutes until golden brown.
5Watch for any sign of buring.
6Add okra, cumin and pepper.
7Continue to fry, lifting and turning vegetables constantly, for 25 minutes until okra is tender and most of the liquid has evaporated.
8Serve at once from a heated bowl
