Ingredients:
1 1/2 lbsPork loin, boneless
1/2 cupOnion, minced
2 tbspPeanut butter
2 tbspLemon juice
2 tbspSoy sauce
1 tbspBrown sugar
1 tbspVegetable oil
1 Garlic clove, minced
Ds Hot pepper sauce
Rice, cooked, hot
RAITA
3 medCucumbers, peel, seed, thin
- sliced
1 tbspOnion, minced
2 cupPlain yogurt
1/2 tspBlack pepper
1/4 tspCumin
2 tbspCilantro, chopped
Procedures:
1Make raita by combining ingredients.
2Cover and chill for 2-24 hours to combine flavors.
3Cut pork into ? cubes; place in shallow dish.
4In blender or food processor combine remaining ingredients except rice and raita.
5Blend until smooth.
6Pour over pork.
7Cover and marinate in refrigerator 10 minutes.
8Thread pork on skewers (if using bamboo skewers, soak in water 1 hour to prevent burning).
9Grill or broil 10-12 minutes, turning occasionally, until done.
10Serve with hot cooked rice and raita, if desired
