Ingredients:

| large | Tomato, ripe | | 1
| cup | Basil, chopped | | 2
| large | Garlic cloves | | 1/4
| cup | Pine nuts (pignoli) | | 1/2
| cup | Parmesan Cheese | | 2/3
| cup | Olive oil | | | DIRECTIONS |

Procedures:
| 1 | Cut the tomato in half horizontally and grill (broil) until soft and quite blackened on the surface. | | 2 | Remove the skin and chop the flesh. | | 3 | Put the chopped basil in a mortar and pound until crushed. | | 4 | Peel and crush the garlic, chop the nuts and add both to the basil. | | 5 | Pound again. | | 6 | Add the chopped tomato and continue to pound, finally adding the freshly grated cheese. | | 7 | When all is smooth, pour on the oil drop by drop, as if making a mayonnaise, continuing to pound constantly. | | 8 | When finished, this marvellous sauce should have the consistency of creamed butter. | | 9 | Serve with spaghetti, ghocchi, noodles, or in a minestrone-type soup. |
