Ingredients:
1 largeTomato, ripe
1 cupBasil, chopped
2 largeGarlic cloves
1/4 cupPine nuts (pignoli)
1/2 cupParmesan Cheese
2/3 cupOlive oil
DIRECTIONS
Procedures:
1Cut the tomato in half horizontally and grill (broil) until soft and quite blackened on the surface.
2Remove the skin and chop the flesh.
3Put the chopped basil in a mortar and pound until crushed.
4Peel and crush the garlic, chop the nuts and add both to the basil.
5Pound again.
6Add the chopped tomato and continue to pound, finally adding the freshly grated cheese.
7When all is smooth, pour on the oil drop by drop, as if making a mayonnaise, continuing to pound constantly.
8When finished, this marvellous sauce should have the consistency of creamed butter.
9Serve with spaghetti, ghocchi, noodles, or in a minestrone-type soup.
