Vegetable saute with miso sauce over linguine

Ingredients:
2 tbspSafflower oil
2 Garlic cloves, minced
1/4 cupSliced shittake mushrooms
1/2 cupZucchini, sliced
1/2 cupEggplant, sliced
1/2 cupYellow pepper, sliced
8 Scallions, finely chopped
1/4 cupMiso
1 cupVegetable stock
4 tbspFresh chopped parsley
1 lbsCooked linguine
Procedures:
1In a large saucepan, heat oil over medium heat.
2Add veggies and garlic and saute for about 3 minutes.
3Transfer to bowl.
4Add miso.
5Slowly add stock while stirring well.
6Add parsley, veggies and pasta.
7Toss and serve.
8Add more liquid if too thick.
