Bbq baked beef ribs

Ingredients:
8 lbsMeaty beef short ribs
1/2 tspSalt
1/2 tspBlack pepper
6 clGarlic, coarsely chopped
4 medCarrots, diagonally sliced
3 medOnion, sliced
1 1/2 cupBarbecue sauce
1 canTomato sauce, 15oz
1 canBeef broth, 13oz, reduced

Procedures:
1Preheat oven to 425 °F.
2Sprinkle ribs with salt and pepper; place in single layer in a large noasting pan.
3Roast nbs i hour, until nicely browned and some of the fat is rendered, turning once.
4Transfer ribs to a large plate; drain all but 1 tablespoon drippings from pan.
5To drippings, stir in garlic, carrots and onion.
6Retum to oven and roast 15 to 20 minutes.
7Reduce oven temperature to 325 °F.
8To vegetables in pan, stir in banbecue sauce, tomato sauce, broth and ?cup water.
9Return ribs to pan, spooning some sauce over them.
10Tightly cover with foil.
11Bake ribs 1 ?hours, or until very tender, turning once.
12Skim fat off surface.
13Dinner plan: remove ?of ribs and sauce to a microwaveproof container; cool, then freeze for later use.
14Serve remaining ribs.
