Ingredients:
2 tbspOriental sesame oil
1 tbspMinced fresh ginger
1 tbspMinced shallot
1/2 tspHot red chilies, crushed
-dried
1/2 tspGround coriander
1/2 cupRice vinegar
1/3 cupReduced-sodium soy sauce
2 tbspOyster sauce
Procedures:
1Pour oil into a 10-12" frying pan.
2Place over medium-high heat until oil just starts to smoke, about 2 minutes.
3All at once, add ginger, shallot, chilies, and coriander.
4Stir for 30 seconds.
5At once, add rice vinegar, soy sauce, and oyster sauce.
6Boil, uncovered, over high heat until sauce is reduced to 1 cup, about 1 minute.
