Marinated carrots

Ingredients:
3 lbsCarrots
2 cupWater
1/2 tspSalt
1 Onion, diced or rings
3/4 cupCider vinegar
1 cupSugar
1/2 cupOil
1/4 tspPepper
1 tspPrepared mustard
1/4 cupParsley, chopped
Procedures:
1Servings: 8 peel and cut carrots into ? diagonal slices.
2Cook in boiling salted water until crisp tender (6-8 min).; drain.
3Combine remaining ingrediants, stirring until sugar dissolves.
4Pour over warm carrots.
5Refrigerate coverd, 12 or more hrs.
6Drain before serving or serve with slotted spoon.
