Ingredients:

| lbs | Dried black eyed peas | | 2
| cup | Italian salad dressing | | 2
| cup | Green pepper, diced | | 1 1/2
| cup | Onion, diced | | 1/2
| cup | Jalapeno peppers, finely | | | -minced | | 2
| oz | Pimiento, diced, drained | | 1
| tbsp | Garlic, finely chopped | | | -Salt to taste | | | Hot pepper sauce, to taste | | 1
| cup | Parsley, chopped, optional |

Procedures:
| 1 | Soak peas overnight. | | 2 | Cook until just tender about 40 minutes. | | 3 | Do not over cook. | | 4 | Drain peas. | | 5 | In a large bowl, combine peas and salad dressing. | | 6 | Let peas cool. | | 7 | Add green pepper, onion, green onion, jalapenos, pimiento, garlic, salt, hot pepper sauce and parsley. | | 8 | Marinate overnight. | | 9 | Serve as a relish, on a bed of lettuce as a salad or can be sutffed in a tomato. | | 10 | Yield: 10-12 servings |
