Pickled black eyed peas

Ingredients:
1 lbsDried black eyed peas
2 cupItalian salad dressing
2 cupGreen pepper, diced
1 1/2 cupOnion, diced
1/2 cupJalapeno peppers, finely
-minced
2 ozPimiento, diced, drained
1 tbspGarlic, finely chopped
-Salt to taste
Hot pepper sauce, to taste
1 cupParsley, chopped, optional
Procedures:
1Soak peas overnight.
2Cook until just tender about 40 minutes.
3Do not over cook.
4Drain peas.
5In a large bowl, combine peas and salad dressing.
6Let peas cool.
7Add green pepper, onion, green onion, jalapenos, pimiento, garlic, salt, hot pepper sauce and parsley.
8Marinate overnight.
9Serve as a relish, on a bed of lettuce as a salad or can be sutffed in a tomato.
10Yield: 10-12 servings
