Ingredients:

| lbs | Ripe red plums | | 1
| lbs | Cooking apples | | 1
| lbs | Onions | | 2
| | Garlic cloves | | 1
| lbs | Sultanas | | 1
| pint | Distilled malt vinegar | | 1
| pinch | Mixed spice | | 1/2
| tsp | Level ginger | | 1
| lbs | Demerara sugar |

Procedures:
| 1 | Wash, halve and de-stone the plums. | | 2 | Peel, quarter and core the apples. | | 3 | Peel and roughly chop the onions. | | 4 | Peel and crush the garlic. | | 5 | Put all the fruit and vegetables in a preserving pan with the sultanas, vinegar and spices. | | 6 | Bring to a boil, stirring frequently, then simmer for 30 - 40 minutes until the ingredients are very soft. | | 7 | Add the sugar. | | 8 | Stir over gentle heat until completely dissolved and then simmer uncovered until thick and jam-like. | | 9 | Spoon into clean warm jars. | | 10 | Cover. | | 11 | Makes approx 3 lbs |
