Ingredients:

| cup | Walla Walla onions, sliced | | | -- into ? slices | | | Cooking spray OR olive oil | | 1
| cup | Tomato, diced & seeded | | 2
| tbsp | Basil, thinly sliced | | 1 1/2
| tbsp | Jalapeno chiles, seeded & | | | -- chopped | | 2
| tsp | Olive oil | | 2
| tsp | White wine vinegar | | 1/4
| tsp | Salt | | 1/8
| tsp | Pepper |

Procedures:
| 1 | Arrange onion slices in a single layer on a jelly-roll pan coated with cooking spray. | | 2 | Bake at 400 °F for 15 minutes. | | 3 | Turn over the onion slices, and bake an additional 25 minutes or until tender and lightly browned. | | 4 | Let cool; coarsely chop onion. | | 5 | Combine the chopped onion and remaining ingredients in a bowl; stir well. | | 6 | Let stand at room temperature 20 minutes before serving. | | 7 | Serve relish with grilled salmon or chicken. | | 8 | Serving size 1/3 cup. | | 9 | Source unknow |
