Ingredients:
3 cupWalla Walla onions, sliced
-- into ? slices
Cooking spray OR olive oil
1 cupTomato, diced & seeded
2 tbspBasil, thinly sliced
1 1/2 tbspJalapeno chiles, seeded &
-- chopped
2 tspOlive oil
2 tspWhite wine vinegar
1/4 tspSalt
1/8 tspPepper
Procedures:
1Arrange onion slices in a single layer on a jelly-roll pan coated with cooking spray.
2Bake at 400 °F for 15 minutes.
3Turn over the onion slices, and bake an additional 25 minutes or until tender and lightly browned.
4Let cool; coarsely chop onion.
5Combine the chopped onion and remaining ingredients in a bowl; stir well.
6Let stand at room temperature 20 minutes before serving.
7Serve relish with grilled salmon or chicken.
8Serving size 1/3 cup.
