Ingredients:
1 1/4 cupFarina
1 cupWater
1 medYellow onion, finely chopped
2 ea Green chiles, chopped
1/2 tspSalt
1 tbspCilantro, chopped
1/4 cupCashews, chopped
2 tbspCoconut cream
3/4 tspGinger, minced
Oil for deep-fat frying
Procedures:
1Bring water to a boil.
2Place farina in a bowl & add the water stirring as yuo add, to make a dough.
3Add onions, chiles, salt, cilantro, cashews, coconut cream & ginger.
4Mix well.
5Take 2 tb of the dough mixture & form into a thick round patty.
6Cut with a doughnut cutter or use your fingers to make a hole in the centre.
7Repeat with the remaining dough.
8Heat vegetable oil & fry the vadas 4 at a time for about 10 minutes, turning as necessary.
9Drain on paper towels & serve hot with chutney.
