Ingredients:
2 tbspOil, vegetable
4 tbspOnion, red, chopped fine
2 tbspGarlic cloves, chopped fine
1 lbsPork, lean, minced
2 tbspFish sauce (Nam Pla)
1/2 tspPepper, white, ground
1 tbspSugar, granulated
1 cupPeanuts, roasted, unsalted
-ground
1 largePineapple, fresh
Procedures:
1Heat oil in frying pan over medium heat.
2Saute" onion and garlic 1 minute.
3Add pork, fish sauce, pepper, sugar.
4Stir well and cook over moderate heat 10 minutes.
5Stir in the peanuts and remove from heat.
6Arrange pineapple slices on individual plates and spoon a portion of the pork into each.
7Garnish with chili peppers and coriander leaves.
