Ingredients:
1/3 cupEgg substitute
2 cupPared and cored apples
-finely chopped (2 medium)
1 1/2 cupCooked white rice
1/2 cupPitted dates, snipped
1/4 cupSugar
1/2 tspCinnamon
2 tbspUnsalted margarine, softened
1 tspVanilla
2 Egg whites
1/4 tspCinnamon
Procedures:
1Preheat oven to 325 °F.
2Mix together the egg substitute, apples, rice, dates, sugar, cinnamon, margarine, and vanilla.
3Beat the egg whites until stiff peaks form; fold into rice mixture.
4Turn into a 1 ?quart casserole or souffle dish.
5Sprinkle cinnamon on top.
6Place casserole in a pan of very hot water (1 inch deep).
7Bake at 325°F.
8About 70 minutes.
9Serve warm or chilled.
10If desired, garnish with fresh apple slices dipped in lemon juice.
