Ingredients:

| cup | Water | | 1/2
| cup | Milk | | 2
| tbsp | Dijon mustard | | 1 1/2
| cup | Long grain rice | | 1/2
| cup | Cheddar or Swiss | | | -cheese, grated or shredded | | 1
| lbs | Boneless chicken breasts, cut | | | -into strips | | 1 1/2
| cup | Frozen broccoli cuts, thawed | | 2
| tbsp | Oil | | 10 1/2
| oz | Can condensed cream of | | | -chicken soup | | 2
| tbsp | Chopped pimento |

Procedures:
| 1 | Bring water to a boil. | | 2 | Stir in rice. | | 3 | Cover and remove from heat. | | 4 | Let stand 5 minutes or until all water is absorbed. | | 5 | Meanwhile, cook and stir chicken in hot oil until lightly browned. | | 6 | Stir in soup, milk, mustard and cheese; add broccoli and pimento. | | 7 | Bring to a full boil. | | 8 | Reduce heat and simmer 2 minutes. | | 9 | Pour over rice. | | 10 | Makes 6 servings |
