Lentils and rice (mujadarra)

Ingredients:
5 medYellow onions -- peeled
3 tbspOlive oil
1 cupLentils
3 1/2 cupCold water
1 cupLong-grain brown rice
2 tspSalt
Procedures:
1Dice 3 of the onions.
2Heat a large heavy skillet and add 2 tablespoons of the olive oil and the diced onions.
3Saute until quite brown and set aside.
4Put the lentils and water in a large covered pot.
5Bring to a boil, covered, then simmer for about 15 minutes.
6Add the cooked onion to the lentils along with the rice and salt.
7Cover and simmer for 20 minutes, until rice and lentils are soft.
8Remove from heat and let stane 5 minutes.
9Slice the remaining 2 onions into rings.
10Heat the skillet again and saute the rings in the remaining oil.
11To serve, top the lentils with the sauteed onion rings
