Melons stuffed with fruits and vegetables

Ingredients:
3 smallMelons, cantaloupe is a good
-choice
FOR STUFFING
1/3 cupOil
2 cupCarrots, thinly sliced
2 tbspRaisins, seedless
1 tsp-Salt
1/2 tsp-Pepper
1 cupGreen apple, chopped
1 cupGreen onion, chopped
-green part only
1/2 cupLemon rind, grated
3 cupRice, cooked
FOR TOPPING
1 tbspOil
2 tbspPine nuts
Procedures:
1Cut each melon in half and remove and discard the seeds.
2Scoop out the fruit and reserve.
3Heat ?cup oil in large skillet.
4Add the carrots and raisins.
5Saute together until the carrots are soft.
6Add the salt, pepper, apple, green onion and lemon rind.
7Continue cooking until the apples are soft.
8Remove from heat and cool.
9Preheat oven to 325°F.
10Combined the sauteed mixture with cooked rice and stuff the melons.
11Chop up two cups of the reserved melon & arrange on top of the stuffing.
12Place the stuffed melons in a baking dish and bake for 20 minutes.
13Heat 1 tbsp of oil in a small pan and brown the pine nuts, being careful not to let them burn.
14Sprinkle on top of baked melons and serve.
