Ingredients:
| 1
| cup | Rich milk | | 1/2
| cup | Strong coffee | | 1/2
| | Square unsweetened chocolate | | 1/2
| cup | Granulated sugar | | 1/2
| tsp | Salt | | 1
| | Egg, beaten | | 2
| cup | Cooked rice | | 1/2
| cup | Chopped raisins | | 1/2
| cup | Chopped walnuts | | 1/2
| cup | 32% cream, whipped |

Procedures:
| 1 | Scald milk in the top of a double boiler. | | 2 | Add coffee and blend. | | 3 | Add chocolate, stirring until melted. | | 4 | Add sugar and salt. | | 5 | Add some of this hot mixture to beaten egg; then return to double boiler and cook for 5 minutes. | | 6 | Stir in rice and cool. | | 7 | Whip cream until stiff. | | 8 | Fold in raisins, walnuts and whipped cream. | | 9 | Chill well in individual sherbet glasses. | | 10 | Serves 8. ar/9 |
