| cup | Fresh orange juice | | 1 1/4
| tsp | Salt | | 1/4
| tsp | Thyme | | 1
| cup | Uncooked rice | | | Grated rind of 1 orange |

| 1 | Contributed to the echo by: janice norman a wonderful sidedish for baked ham. | | 2 | Orange rice melt butter in a heavy saucepan. | | 3 | Add celery and onions, and cook until onion is soft and golden. | | 4 | Add water, orange juice, rind, salt and thyme. | | 5 | Bring to a boil. | | 6 | Add rice slowly, stirring constantly. | | 7 | Cover; reduce heat and simmer for 25 minutes or until rice is tender |
