| tsp | SALT | | 1/4
| cup | BUTTER | | 2
| tbsp | FLOUR | | 1
| tbsp | BROWN SUGAR | | 1/2
| tsp | CURRY POWDER | | 1/8
| tsp | CINNAMON | | 1
| each | 1" PIECE OF GINGER ROOT | | 1 1/2
| cup | ORANGE JUICE | | 1/2
| cup | RAISINS | | 1/2
| cup | CHOPPED PECANS | | 2
| each | ORANGES, CUT INTO WEDGES | | 4
| cup | HOT COOKED RICE |

Procedures:
| 1 | Sprinkle chicken with ?teaspoon salt. | | 2 | Heat butter in large skillet and brown chicken pieces. | | 3 | Remove chicken fron pan. | | 4 | Combine flour, ?tea- spoon salt, sugar, curry powder and cinnamon. | | 5 | Stir into pan drippings to make a smooth paste. | | 6 | Add ginger and orange juice. | | 7 | Cook, stirring constantly until sauce bubbles and begins to thicken. | | 8 | Return chicken to pan and raisins. | | 9 | Cover and cook over low heat for 40 to 50 minutes, until chicken is tender and cooked through. | | 10 | Add nuts and orange slices. | | 11 | Heat through. | | 12 | Spoon cooked rice onto large platter and top with chicken pieces and some of the sauce. | | 13 | Serve remaining sauce on the side in a gravy boat |
