Ingredients:

| med | Onion, diced | | 1/4
| cup | Olive oil | | 1 1/2
| cup | Rice, uncooked | | 6
| | Chicken bouillon cubes | | 3
| cup | -water, boiling | | 1/2
| tsp | Sage | | 10
| oz | Spinch, frozen, part-thawed |

Procedures:
| 1 | Preheat oven to 375 degrees. | | 2 | Saute" onion in oil. | | 3 | Add rice. | | 4 | Saute" 2-3 minutes, stirring well. | | 5 | Transfer to a 1 ?quart casserole. | | 6 | Dissolve bouillon cubes in water and add sage. | | 7 | Pour over rice. | | 8 | Place spinach on top of rice. | | 9 | Bake covered at 375 °F for 45 minutes or until liquid is absorbed. | | 10 | When done, gently stir spinach into rice |
