Red beans with rice

Ingredients:
1 lbsRed kidney beans
1 lbsSalt pork
2 eachCloves garlic
1 tspItalian seasoning
1 eachBell pepper
1 eachChopped onion
1 eachStalk celery
1 eachWhole hot pepper
Procedures:
1Boil pork 5 minutes to get rid of salt.
2Put pork in second water (hot) and add beans, water, should be one-half inch above beans.
3Add immediately, one bell pepper, one chopped onion, celery, garlic, italian seasoning and whole hot pepper.
4Cook slowly two to three hours, until gravy is thick and beans tender -- just before dishing out add a pinch of italian seasoning again.
5Salt to taste and serve with rice
