Ingredients:
2 tbspMargarine
1/2 lbsFresh or frozen okra 1" pcs.
2 cupChopped celery
1 medOnion, chopped
1 smallSweet green pepper, chopped
2 Garlic cloves, minced
8 ozCan tomato paste
4 Ripe tomatoes peeled OR
16 ozCan peeled tomatoes
2 cupWater
2 cupChopped cooked turkey
3/4 tspGumbo file powder
Cooked rice
Procedures:
1Melt the margarine in a large skillet.
2Add the okra.
3Saute until the okra loses its shiny appearance, about 5 minutes.
4Remove the okra pieces to a bowl.
5Add the celery onion, green pepper, and garlic to the skillet.
6Cook over medium heat until the onion is transparent.
7Add the tomato paste, tomatoes, water, okra mixture, and turkey.
8Cook over low heat 10 minutes or until turkey is hot.
9Add the file powder.
10Stir to blend.
11Spoon over the rice in soup bowls.
