Cassava bibingka

Ingredients:
4 cupFresh cassava
2 cupCoconut milk
2 tbspButter, melted
3 Eggs
2 cupSugar
1 tbspSalt
1/2 cupPure coconut cream
Cheese, grated or
Strips of cottage cheese
Procedures:
1Peel and grate cassava.
2Beat eggs; add sugar, butter and salt.
3Mix thoroughly.
4Add the grated cassava and coconut milk.
5Mix well and place in a pan or bibinka mold lined with banana leaves.
6Bake until half done.
7Brush with coconut cream.
8Sprinkle with grated cheese or strips of local cottage cheese.
9Brown top under hot cover or oven broiler.
10*cassava is also know as yucca root.
