Ingredients:
1/2 cupSifted cake flour
1/2 cupSifted powdered sugar
6 Egg whites
1/2 tspCream of tartar
1/2 tspVanilla
1/8 tspSalt
1/2 cupGranulated sugar
3/4 cupSifted cake flour
3/4 tspBaking powder
6 Egg yolks
2 tbspLemon juice
1 tbspCold water
1/2 cupGranulated sugar
Powdered sugar
Procedures:
1White part: sift ?cup cake flour and ?cup powdered sugar together three times.
2Beat egg whites till frothy; add cream of tartar, vanilla, and salt.
3Beat till soft peaks form.
4Gradually beat in ?cup granulated sugar.
5Sift a fourth of the flour mixture at a time over top; fold in.
6yellow part: sift ?cup cake flour and baking powder together three times.
7Beat yolks with juice and water until thick, 5 to 7 minutes; gradually beat in ?cup granulated sugar.
8Sift a fourth of the flour mixture at a time over top; fold in.
9alternately spoon yellow and white mixtures into an ungreased 9- or 10-inch tube pan.
10Bake at 375 °F for 35 to 40 minutes.
11Invert and cool.
12Dust cake with powdered sugar.
