Ingredients:
1/2 lbsHot Italian sausage, bulk
1/2 tspOriental chile paste (opt)
6 Sun-dried tomatoes
1/2 lbsMacaroni, cooked
2 tbspFresh basil, chopped
1/2 cupFreshly-made bread crumbs
Vegetable oil cooking spray

Cheese Sauce:
2 tbspButter
2 tbspFlour
1 1/2 cupMilk, heated
1/2 cupWhite cheddar cheese, grated
Salt and fresh ground pepper

Procedures:
1Preheat the oven to 375 degrees.
2Grease a 1-?quart casserole with oil spray.
3Cook sausage in a pan over medium-high heat.
4Drain off grease.
5Stir in optional chile paste.
6Cover tomatoes with water in a microwave-safe dish and nuke on high until softened--about 2 minutes.
7Drain off liquid and mince tomatoes.
8Put the cooked macaroni, sausage, tomatoes and basil into the casserole.
9Pour the cheese sauce over it and mix gently with a fork.
10Spread the crumbs over the cheese and spray top with vegetable oil.
11Bake, uncovered, until the top is browned and the sauce is bubbling, about 30 minutes.
12Cheese sauce: melt the butter in a heavy-bottomed saucepan.
13Stir in the flour and cook, stirring constantly, until bubbly but not brown--about 2 minutes.
14Add the hot milk, continuing to stir as the sauce thickens.
15Bring to a boil.
16Add salt and pepper to taste, lower the heat and whisk in cheese.
17Cook, stirring, 2 to 3 minutes more.
