Petite cheesecakes

Ingredients:
2 packCream cheese, softened (8oz)
2 largeEggs
3/4 cupSugar
1 tbspGrated lemon rind
1 tspVanilla extract
32 Vanilla wafer cookies
Cherry pie filling(or other)
Procedures:
1Preheat oven to 375°F.
2Line 32 small muffin tins with foil baking cups.
3In a large bowl, combine the cream cheese, eggs, sugar, lemon rind and vanilla with an electic mixer.
4Blend well.
5Place one vanilla wafer in each muffin cup.
6Spoon about 1 tbsp of cheese mixture on top of the vanilla wafers.
7Bake for 15 minutes, cool slightly.
8To serve, top each cheesecake with a tbsp of cherry pie filling.
9Notes: keep refrigerated.
10Freezes well without the pie filling.
11Substitute any other filling as well.
