Ingredients:
| 2
| pack | Cream cheese, softened (8oz) | | 2
| large | Eggs | | 3/4
| cup | Sugar | | 1
| tbsp | Grated lemon rind | | 1
| tsp | Vanilla extract | | 32
| | Vanilla wafer cookies | | | Cherry pie filling(or other) |

Procedures:
| 1 | Preheat oven to 375°F. | | 2 | Line 32 small muffin tins with foil baking cups. | | 3 | In a large bowl, combine the cream cheese, eggs, sugar, lemon rind and vanilla with an electic mixer. | | 4 | Blend well. | | 5 | Place one vanilla wafer in each muffin cup. | | 6 | Spoon about 1 tbsp of cheese mixture on top of the vanilla wafers. | | 7 | Bake for 15 minutes, cool slightly. | | 8 | To serve, top each cheesecake with a tbsp of cherry pie filling. | | 9 | Notes: keep refrigerated. | | 10 | Freezes well without the pie filling. | | 11 | Substitute any other filling as well. |
