Fish, steaks, firm fleshed
Salt (to taste)
Pepper, white (to taste)
SALSA
2 tspSauce, plum
1 tspSauce, soy
1/4 cupAsian pear, chopped
-- diced
1 tspCilantro
1 tspJalapeno OR
1 tspSerrano
1 tbspOnion, purple
1 tbspJuice, lemon
1 tspHoney OR
1 tspSugar
1 tbspPepper, red, diced
GARNISHES
Papaya, sliced into a
-- fan shape for garnish
Kiwi, peeled, sliced into
-- coins for a garnish

2season the fish with a little salt and white pepper.
3Grill quickly on a non-stick surface.
4The fish is done when it turns opaque throughout and flakes to a fork.
