Ingredients:

| cup | Chopped Onion | | 1
| tbsp | Flour | | 1/4
| cup | Cider Vinegar | | 2
| tbsp | Sugar | | 1/2
| tsp | Salt | | 1/4
| tsp | Dry Mustard | | 1
| tsp | Caraway Seeds | | 1/2
| cup | Finely Chopped Celery | | 1/4
| cup | Finely Chopped Parsley |

Procedures:
| 1 | Place potatoes in a 2-quart glass measure or casserole; add 1 cup water. | | 2 | Cover with vented plastic wrap or a lid. | | 3 | Stirring midway through coking, microwave on high 16 minutes, or until potatoes are tender. | | 4 | Drain liquid and transfer potatoes to a large bowl; set aside. | | 5 | Place bacon pieces in same glass utensil. | | 6 | Microwave on high 4 to 5 minutes. | | 7 | Using a slotted spoon, transfer bacon to bowl of potatoes. | | 8 | Add onion to bacon drippings and microwave on high 3 minutes, or until tender. | | 9 | In a small bowl, combine remaining 2/3 cup water, flour, vinegar, sugar, salt, mustard and caraway seeds. | | 10 | Using a whisk, stir into onion mixture. | | 11 | Microwave on high 1 minute, or until thick. | | 12 | Pour sauce mixture over potatoes. | | 13 | Add celery and parsley; toss gently to coat. | | 14 | Serve warm. | | 15 | Makes 6 servings, each: 222 calories, 4 grams protein, 3 grams fat (9% of total calories), 46 grams carbohydrates, 4 grams dietary fiber, 3 milligrams cholesterol, 296 milligrams sodium. | | 16 | This recipe is from the houston chronicle |
