Ingredients:

2 lbsRed Potatoes, washed and
-diced
1 2/3 cup-Water, divided
4 sliceBacon, diced
1/2 cupChopped Onion
1 tbspFlour
1/4 cupCider Vinegar
2 tbspSugar
1/2 tspSalt
1/4 tspDry Mustard
1 tspCaraway Seeds
1/2 cupFinely Chopped Celery
1/4 cupFinely Chopped Parsley
Procedures:
1Place potatoes in a 2-quart glass measure or casserole; add 1 cup water.
2Cover with vented plastic wrap or a lid.
3Stirring midway through coking, microwave on high 16 minutes, or until potatoes are tender.
4Drain liquid and transfer potatoes to a large bowl; set aside.
5Place bacon pieces in same glass utensil.
6Microwave on high 4 to 5 minutes.
7Using a slotted spoon, transfer bacon to bowl of potatoes.
8Add onion to bacon drippings and microwave on high 3 minutes, or until tender.
9In a small bowl, combine remaining 2/3 cup water, flour, vinegar, sugar, salt, mustard and caraway seeds.
10Using a whisk, stir into onion mixture.
11Microwave on high 1 minute, or until thick.
12Pour sauce mixture over potatoes.
13Add celery and parsley; toss gently to coat.
14Serve warm.
15Makes 6 servings, each: 222 calories, 4 grams protein, 3 grams fat (9% of total calories), 46 grams carbohydrates, 4 grams dietary fiber, 3 milligrams cholesterol, 296 milligrams sodium.
