Feta-stuffed chicken

Ingredients:
4 (4-ounce) skinned, boned
Chicken breast halves
1/4 cupDry breadcrumbs
1/4 cup(1 ounce) crumbled feta
Cheese with basil and tomato
Vegetable cooking spray
1 1/2 tspMargarine, melted
3 cupTorn spinach
1/2 cupFresh basil
1 tbspBalsamic vinegar
1 tspOlive oil
1/8 tspPepper
Procedures:
1Place each chicken breast half between 2 sheets of heavy-duty plastic wrap; flatten to ?inch thickness, using a meat mallet or rolling pin.
2Dredge chicken in breadcrumbs.
3Spoon 1 tablespoon of cheese onto each piece of chicken, and fold chicken in half.
4Place folded breast halves in a 8-inch square baking dish coated with cooking spray.
5Drizzle margarine over chicken.
6Bake at 400 °F for 25 minutes or until done.
7Combine spinach and basil in a bowl, and drizzle with vinegar and oil.
8Sprinkle pepper over salad; toss well.
9Serve chicken over salad.
