| | (4-ounce) skinned, boned | | | Chicken breast halves | | 1/4
| cup | Dry breadcrumbs | | 1/4
| cup | (1 ounce) crumbled feta | | | Cheese with basil and tomato | | | Vegetable cooking spray | | 1 1/2
| tsp | Margarine, melted | | 3
| cup | Torn spinach | | 1/2
| cup | Fresh basil | | 1
| tbsp | Balsamic vinegar | | 1
| tsp | Olive oil | | 1/8
| tsp | Pepper |

Procedures:
| 1 | Place each chicken breast half between 2 sheets of heavy-duty plastic wrap; flatten to ?inch thickness, using a meat mallet or rolling pin. | | 2 | Dredge chicken in breadcrumbs. | | 3 | Spoon 1 tablespoon of cheese onto each piece of chicken, and fold chicken in half. | | 4 | Place folded breast halves in a 8-inch square baking dish coated with cooking spray. | | 5 | Drizzle margarine over chicken. | | 6 | Bake at 400 °F for 25 minutes or until done. | | 7 | Combine spinach and basil in a bowl, and drizzle with vinegar and oil. | | 8 | Sprinkle pepper over salad; toss well. | | 9 | Serve chicken over salad. |
