Ingredients:
1 Basic arepa dough recipe
2 tbspOil
1/2 lbsGround beef
1/2 lbsGround pork
1 medOnion, chopped
1 Garlic clove, minced
1 smallGreen chile, chopped
2 largeTomato, peel, seed, chop
1/2 tspAchiote powder
1/2 tspGround cumin
1/4 tspThyme leaves
1/4 tspBlack pepper
1 tspSalt
8 Olive, pimento-stuffed
-sliced
1 tbspCapers
Procedures:
1Heat oil in a heavy skillet over medium heat, add meat, onions, garlic, green chile, tomato, achiote, cumin, thyme, black pepper and salt, and cook, stirring occasionally, for 20 minutes, or until tomatoes have formed a thick sauce.
2Stir in olives and capers.
3prepare a recipe of basic arepas, shape into 3-inch discs (?inch thick), cook.
4When done, split in half, fill with meat sauce and serve hot.
