Ingredients:
2 Whole chickens( 3 ?pounds
Each)
3 tbspDry rub #1
Barbecue sauce
****** Dry Rub #1 ******
1 tbspPaprka, Hungarian
1/2 tspCelery salt
1/2 tspSugar
1/2 tspSage
1/2 tspMustard
1/2 tspChipotle powder
****** Barbecue Sauce

1 tbspPeanut oil
2 tbspOnion -- minced
1 1/2 cupCider vinegar
1 cupKetchup
3 tbspDry rub #1
2 tbspBrown sugar
1 cupCoffee
1 tbspMustard
2 Cloves garlic -- minced
Procedures:
1Mix all ingredients well and reserve in refrigerator, covered tightly.
2Will keep for up to 2 weeks.
3barbecue sauce:
4in a saucepan, heat peanut oil.
5Add garlic and onion.
6Cook until soft.
7Add remaining ingredients and simmer until thickened.
8Rub the chicken inside and out, with dry rub #1, making sure to get under the skin as much as possible.
9Massage the bird well and refrigerate overnight.
10Prepare the grill with soaked wood chips.
11Split the chicken in half and cook on the grill over slow heat for 45 minutes or until cooked.
12Allow the chicken to cool slightly.
13Pick the meat off the bone, remove the skin.
14Chop the chicken lightly and mix with 1 cup of the barbecue sauce.
15Serve on white bun with cole slaw.
