Ingredients:

| oz | Ricotta, part-skim | | 8
| oz | Mozzarella, low-fat, grated | | 4
| oz | Virginia ham, chopped | | 1/4
| cup | Parmesan cheese, grated | | 10
| oz | Frozen chopped spinach | | 6
| each | 2 oz pita breads | | 2
| tsp | Olive oil |

Procedures:
| 1 | Defrost spinach and squeeze dry. | | 2 | Preheat oven to 400 °F. | | 3 | Spray cookie sheet with nonstick vegetable cooking spray. | | 4 | Combine ricotta, mozzarella, ham, parmesan and spinach. | | 5 | Cut 1" from top of each pita. | | 6 | Spoon cheese mixture into pita, dividing evenly. | | 7 | Place on prepared cookie sheet. | | 8 | Brush tops with oil. | | 9 | Bake for 10 minutes or until heated through. | | 10 | Serve immediately. | | 11 | Serve with tomato salad. | | 12 | Per serving: 435 calories, 30 g protein, 17 g fat (35%), 41 g carbohydrate 994 mg sodium, 58 mg cholesterol |
