Grilled chicken sandwich w/tarragon mayo

Ingredients:
LA TIMES
1/2 cupRed wine vinegar
2 tbspCrushed dried tarragon
2 tbspButter
4 tbspShallots, minced
2 cupMayo
1/2 tbspWhite pepper
6 Whole bonels chicken breasts
-(8oz)
Salt and pepper
6 Sandwich buns
6 Lettuce leaves
6 sliceTomato, opt
Procedures:
1*culbertson winery, temecula combine vinegar and tarragon in sm saucepan.
2Bring to boil and cook until reduced by half.
3Melt butter in sm skillet, saute shallots until tender.
4Combine mayo, tarragon reduction, shallots and white pepper.
5Mix well.
6Remove skin and fat from chicken.
7Pound slighlty with fine side of meat tenderizing mallet.
8Cut in half down natural seam, eliminating any cartilage at center.
9Season with salt and pepper.
10Grill chicken over med heat, turning and basting with 1t reserved mayo mixture per side.
11Slice and warm buns.
12Spread inside of buns generously with flavored mayo.
13Place 2 chicken slices on the bun, top with lettuce, tomato and other bun half.
