Ingredients:

| tbsp | Crushed dried tarragon | | 2
| tbsp | Butter | | 4
| tbsp | Shallots, minced | | 2
| cup | Mayo | | 1/2
| tbsp | White pepper | | 6
| | Whole bonels chicken breasts | | | -(8oz) | | | Salt and pepper | | 6
| | Sandwich buns | | 6
| | Lettuce leaves | | 6
| slice | Tomato, opt |

Procedures:
| 1 | *culbertson winery, temecula combine vinegar and tarragon in sm saucepan. | | 2 | Bring to boil and cook until reduced by half. | | 3 | Melt butter in sm skillet, saute shallots until tender. | | 4 | Combine mayo, tarragon reduction, shallots and white pepper. | | 5 | Mix well. | | 6 | Remove skin and fat from chicken. | | 7 | Pound slighlty with fine side of meat tenderizing mallet. | | 8 | Cut in half down natural seam, eliminating any cartilage at center. | | 9 | Season with salt and pepper. | | 10 | Grill chicken over med heat, turning and basting with 1t reserved mayo mixture per side. | | 11 | Slice and warm buns. | | 12 | Spread inside of buns generously with flavored mayo. | | 13 | Place 2 chicken slices on the bun, top with lettuce, tomato and other bun half. |
