Ingredients:
1/2 lbsBean sprouts
1/2 medOnion, yellow
1/4 lbsPork, chinese bbq
10 tbspOil, vegetable
1 canBamboo shoot tips
1 Scallions, finely chopped
1 tbspSesame seeds
1/2 tspSalt
1/2 tspSugar, granulated
6 largeEggs
1 tspOyster sauce
1/2 tspSoy sauce, light
GRAVY
2 cupChicken broth
1/3 cupMushrooms, sliced (optional)
1/2 tspSalt
1/2 tspSugar, granulated
1 dashPepper, black
1 tspSoy sauce, dark
3 tbspCornstarch
6 tbspWater, cold
Procedures:
1Wash and drain bean sprouts.
2Cut onion into thin slices.
3Cut pork into thin strips, julienne style.
4Heat wok, adding 1 tablespoon oil.
5Stir-fry bean sprouts, onion, bbw pork, and bamboo shoots for 2 minutes with ?teaspoon salt and ?teaspoon sugar.
6(do not overcook).
7Let cool before using.
8In a separate bowl beat the eggs, add oyster sauce and soy sauce; mix well.
9Add the stir-fried ingredients and mix thoroughly.
10Heat wok, add 1 tablespoon oil and drop ?c. of the mixture in the wok.
11Fry about 2 minutes on each side.
12Place on serving dish and set aside.
13Repeat procedure with remaining oil and mixture.
14Pour gravy, over patties and garnish with the chopped green onion and toasted sesame seeds.
15Toast sesame seeds in a dry frying pan, without oil for 3 minutes.
16Gravy: bring broth to a boil.
17Add mushrooms, salt, sugar, pepper and dark soy sauce.
18Prepare thickening made with the cornstarch and cold water; add the seasoned broth and cook for 1 minute.
