Lentil sandwiches

Ingredients:
1 cupCooked lentils, drained
Liquid reserved
1/4 Onion, thinly sliced
2 Cloves garlic, chopped
1 tbspOlive oil
1 tspChopped parsley
Salt and pepper
2 Whole-wheat pita breads
Optional: chopped lettuce
Procedures:
1Heat olive oil in skillet over medium heat ans saute onion until it softens.
2Add garlic and continue cooking until onion is translucent.
3place lentils in mixing bowl.
4Combine onions and garlic, along with oil remaining in pan, with lentils.
5Stir in parsley, salt, and pepper.
6Drizzle with cooking liquid and/or additional olive oil until desired consistency.
7Cut pita bread in half, spoon in filling and add lettuce, if desired.
8The filling also can be served with hearty wheat crackers as a dip.
