Ingredients:
1 Sourdough bread, round loaf
1/4 cupBalsamic vinegar
1 tbspOlive oil
1 tspOregano, whole, dried
1 tspParsley, freeze-dried, dried
1 tspPepper
2 Cl Garlic, minced
1 cupMushrooms, sliced, fresh
6 sliceTomatoes, ? thick
2 slicePurple onions, ? thick
2 cupZucchini, shredded
8 ozTurkey slices, lean
6 ozMozzarella cheese, part skim
Procedures:
1Recipe by: janet hall - light and easy cooking slice bread in half horizontally, using an electric or serrated knife.
2Carefully remove soft bread from inside each half, leaving ?inch-thick shells.
3Set aside; reserve soft bread for another use.
4Combine vinegar and next 5 ingredients in shallow baking dish; add mushrooms, tomato slices, and onion rings.
5Let stand 15 to 20 minutes.
6Drain with a slotted spoon, reserving marinade.
7Brush marinade evenly inside each bread cavity.
8Spoon 1 cup zucchini into bottom half; arrange half of mushroom mixture over zucchini.
9Layer with 4 turkey slices and 3 cheese slices.
10Repeat layers with remaining zucchini, mushroom mixture, turkey, and cheese.
11Top with remaining half of loaf.
12Wrap loaf securely in aluminum foil-chill until ready to serve.
13To serve, unwrap and slice loaf into wedges.
